Last night as promised we did a LIVE cooking demo of how to make a healthier version of the cookie. Yep, cookies are still on the menu! It’s all in the ingredients my friends. Our cookies contained things like coconut oil, coconut flakes, cacao, almond butter, honey and flax. And they’re a no bake cookie which couldn’t be more perfect during the summer. Let me list out the awesome nutrition facts of this delicious cookie:
Coconut Oil. Coconut oil is healthy contrary to what’s been flying around the internet lately. Coconut oil is a great source of medium-chain triglycerides or MCT & MCFA’s for medium chain fatty acids. About 65% of the fatty acids in coconut oil are MCT’s. MCT’s are very easy for your body to break down and use for energy. Because they’re so easy to absorb, MCT’s are used therapeutically for people with malabsorption problems, like Crohn’s Disease. They’re also great for anyone missing a gallbladder. MCT’s have shown a lot of promise compared to other fats in the potential uses for treating diabetes, hypertension and other elements of metabolic syndrome. Traditional populations living in tropical areas have been consuming saturated fats, including sources of MCT’s like coconuts, for thousands of years without ill effects. Populations that eat a lot of coconut oil have the lowest heart disease rates in the world!
Cacao. Raw cacao that’s been roasted at high temperatures removes the fat (cacao butter) and provides healthy benefits like lowering insulin resistance and protecting your nervous system. It’s high in resveratrol, a potent anti-oxidant, which guards against toxins. It is thought to reduce the risk of cardiovascular disease, reduce inflammation and lower LDL, or bad cholesterol, reduce blood pressure and the risk of stroke. It may protect nerve cells from damage and fight the plaque buildup that can lead to Alzheimer’s…..and…. it could even limit the spread of cancer cells!
Honey. Honey is way more than a sweetener. It has been used for centuries for healing and rejuvenation. Eating local raw honey may help build immunity to some allergies. It’s rich in powerful antioxidants and cancer fighting phytonutrients. It’s a great substitute for sugar which not only provides major highs and lows in mood and energy, it can also disrupt one the most powerful hormones in the body, insulin. Insulin is closely connected to all the other hormones in your body, including estrogen and testosterone. (do not feed honey to children under 12 months)
Flax Seed. It may be tiny but it’s mighty! Flaxseed is high fiber & phytochemicals, B vitamins, magnesium & manganese. It’s rich in Omega-3 Fatty Acids, which are a key force against inflammation in our bodies and essential for brain function. It is also an amazing source (perhaps THE BEST) of lignans, which convert in our intestines to substances that balance female hormones. Lignans may protect against cardiovascular disease and breast cancer.
Almond Butter. This is a great source of vitamin E which is awesome for our skin ladies! Plus, it’s an excellent anti-oxidant that helps rid our bodies of toxins. And bonus…. it’s delicious!
Simple, refined sugars cause spikes in blood sugar and insulin. But complex carbs, fiber, protein and healthy fats promote more gradual increases and decreases in blood sugar and insulin, lowering the glycemic load and lifting the burden on your hormones. So enjoy a healthier sweet treat (in moderation, of course) and experience a more balanced body!
